Buttermilk – suero de la leche, buttermilch, bebida láctea fermentada
Associated with southern-American cuisine and baking, buttermilk is also popular in Germany and Denmark where it is used in drinks and to make Quark and pancakes. It is also used in Indian cooking in curries and lassis, adding a little sourness to a creamy base.
Traditionally made from the leftover liquid after making butter, now enzymes and bacteria are added to milk to ferment it to make the slightly sour taste.
